What we did during the Palm Sunday snow storm!

Yesterday we came home from Excelsior, Mo with a case of Texas grapefruit. What a bargain for only $16.

So today during the snow storm we peeled a bunch of them. We gave 6 or 7 to the grands and kept out 6 for ourselves.

I  put the sections in jars, added a simple syrup, and cold packed them for 15 minutes.  17 beautiful jars of great fruit!

This is what was going on outside!  We ended up with 6 inches of wet snow.

  4. Great idea! I haven't done any canning for years and wouldn't have thought that direction at all. I think we are all waiting for that "switch" to be flipped to Spring setting....for sure!!! Although this storm missed us, our landscape is still very white from a week ago! Easter blessings.....

  5. One of our favorite things about south Texas in the winter is Rio Star Grapefruit, cheap and delicious. Almost every RVer has a huge net bag of it hanging from their 5th wheel hitch or big mirrors on their motor home!

  7. The fruit look fantastic, I've never heard of cold packing, I like the sound of it, I'll have to look that up!

Love all your snow, we are getting it right now, same storm you got I am sure! It's been really windy, so it's blowing the snow everywhere. It's supposed to snow on and off through tomorrow...I'm getting my winter days in, even if it is spring!

  8. The grapefruit looks wonderful! I've been canning a lot of potatoes this month. I just love the convenience of home-canned food. :)

We ended up with about 8 inches here. It's still snowing, but it's just a dusting today, it looks like.

  9. I want to know how you cold pack those grapefruit? I love them fresh and right now they are delicious even at the grocery store. We got a lot more snow than you did -- close to 14 inches!! It is very pretty though. By the weekend it is supposed to be 60 degrees. Can you believe it?

  10. What a lot of work to get those fruits ready for canning! I am amazed with all the food preserving you do. I have always wanted to can veggies/fruits, but never learned how. The snow looks so fresh and pretty.
